Smoked tofu and kale soup


Cooking is very therapeutic for me and after a long week of school and work I love to relax by trying out some interesting new recipe. This soup combines my three most favourite ingredients (kale, tofu, and lentils) so I was eager to try it out.

Smoked tofu and kale soup

  • 4 dl red lentils
  • 1 onion
  • 3 garlic cloves
  • 4 carrots
  • Kale
  • 300 g smoked flavour tofu
  • 1.25 l water
  • 2 tbsp oil
  • 3 tbsp tomato puree
  • 1 vegetable stock ‘cube’
  • 2 tsp paprika
  • 1 tsp black pepper
  • 1 tsp basil
  • 1 tsp tarragon
  • 1 tsp cayenne pepper


  1. Soak your lentils in cold water. Meanwhile, chop up the onion, peel the carrots and chop them up too.
  2. Sauté the vegetables in your pan for a while. Once the onions have gotten some colour, add the water, tomato puree, lentils, and all of the spices except the cayenne pepper. Let the soup cook for about 15 minutes, or until the lentils and the carrots are soft.
  3. Cut off the hard stems from the kale leaves and chop them up. Add the kale, the vegetable stock ‘cube’, and the cayenne pepper. Dice the tofu and let the soup cook for another 5 minutes.

The soup turned out delicious and in the end it was super easy to make! Definitely going to try this again, maybe mixing it up with some other vegetables. Serve this soup with your favourite bread, or for example with a self-made seed cracker!
