Vegan paella

Vegan paella is one of those delicious foods you don’t eat anywhere else except when you are visiting Spain. However, this time my boyfriend asked me to cook him paella, so I decided to recreate this epic, delicious recipe, and make it vegan. Lemon, dill, and artichoke hearts remind of the sea flavours of the original paella recipe.


Vegan paella

8 servings

  • 5 dl (dry) rice
  • 1 l boiled water
  • 1 l vegetable stock
  • 1 onion
  • 1 red pepper
  • 1 yellow pepper
  • 2 tomatoes
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 bag of frozen peas
  • 1 can of artichoke hearts
  • 1/2 lemon juice
  • a handful of fresh dill
  • salt and pepper to taste


  1. Place 5 dl of dry rice in a bowl and pour 1 l of boiled water in the bowl. Let the rice sit for about 20 minutes. Meanwhile chop up all of your vegetables.
  2. Sauté the onions in some (olive) oil. Add in the peppers and the tomatoes.
  3. Once the peppers are slightly softer, add in the drained rice, vegetable stock, and the spices. Let it simmer on medium heat for about 20 minutes, or until all of the liquid is absorbed.
  4. Add the peas and the artichoke hearts. Let the paella simmer until the peas are thawed completely.
  5. Finish the dish off with dill and lemon juice!
