Vegan chickpea ‘tuna’ spread

Love testing out new vegan substitutes for non-vegan dishes. This chickpea ‘tuna’ spread is a great source of protein and tastes at least (or even better) as its non-vegan inspiration.

Chickpea ‘tuna’ spread

  • 1 can of chickpeas
  • 1 celery stalk
  • 1/2 red onion
  • 3/4 dl vegan mayo
  • 2 tbsp mustard
  • salt and pepper

 

Recipe:

  1. Chop up your veggies and drain the chickpeas. Blitz everything up in a food processor ( or mash and mix by hand). The spread should be quite chunky, not a hummus textured.
  2. Spread the mixture on your toast and add some lettuce, cucumber, or any other veggies you prefer.

 

I made a big batch of this to make some sandwiches for lunch to work later this week, but as I came home I noticed my chickpea spread was gone… I guess, as we say here in Finland, “the fast eat the slow ones”. Better luck next time!
